Mexicasserole… NAILED IT!

Hi, friends! This casserole I made for dinner tonight as so simple to throw together and so delicious it’s not even funny.

You will need two flour tortillas, a pound of ground beef, a package of Mexican rice, salsa, shredded cheese, and tortilla chips.

Place 2 flour tortillas (overlapping or trimmed) in the bottom of a lightly sprayed 13×9 casserole dish, and spread thinly with butter or margarine.

The next layer is one pound of ground beef, browned with a 1/2 packet of taco seasoning and a 1/2 cup of salsa and drained if necessary… I use Utz brand sweet salsa- definitely recommended!

Next a layer of Mexican rice (prepared according to package directions)… I use Knorr Fiesta Sides brand. Cheap and easy to prepare!

The top layer is crunched up tortilla chips and about a cup of shredded cheese (mixed). I used Tostitos with a hint of lime… definitely recommended.

Then simply bake it at 450 for 10(ish) minutes to get the top crispy and melty… that’s all it needs b/c the ingredients are already cooked! VOILA!
